Cookies



I've been baking alot of cookies lately! :-)

This morning I am trying a new recipe and they are so delicious. (You will notice in the picture above that one is missing- this is how I know they are delicious!) I should call my blog "Brenda's Recipe Exchange" because I'm going to share the recipe. I got it from the Taste of Home "Best of Country Cookies" cookbook.

Double Chocolate Sprinkle Cookies

1 cup butter or margarine, softened
1 cup sugar
1 cup packed brown sugar
2 eggs
1 tsp. vanilla extract
2 1/2 cups old-fashioned oats (I used quick-cooking)
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 cups (12 oz.) semisweet chocolate chips
1 1/2 cups chopped walnuts
1 cup chocolate sprinkles

In a large mixing bowl, cream the butter and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Place oats in a blender or food processor; cover and process until finely ground. (This may seem like a pain, but it's worth it!) Combine oats, flour, baking soda, baking powder and salt; gradually add to creamed mixture. Stir in chocolate chips, walnuts and sprinkles. (I left out the walnuts because Tim doesn't like them, but I'm sure they would be delicious). Roll into 1-1/2 in. balls. Place 2 inches apart on ungreased baking sheets. Flatten with a glass. Bake at 350 degrees for 12-14 minutes or until golden brown. Remove to wire racks to cool. Makes 4 1/2 dozen.

YUM! Are you crazy?! Why all of the cookies? I can not resist fresh out of the oven cookies. I don't know how there is only one missing!

There are more than just one missing by now, I assure you! :-)

I'm trying to give my kids a happy childhood memory of homemade cookies.....
